Banana Blueberry Blended Baked Oats is a recipe inspired by the baked oats TikTok craze. They are packed with wholesome ingredients, such as rolled oats, eggs and fruit but what makes this breakfast dish exceptional is the texture of cake.

Cake for breakfast? Count me in! These baked oats are my version of the viral TikTok recipe that combines oatmeal and a mug cake.

At first I was a little skeptical, especially that I like my oatmeal cooked on the stove with some almond milk and no sweetener but my kids are not huge fans of oatmeal’s texture so I gave this a try and came up with a recipe that is not only super healthy and packed with protein, but also absolutely delicious.

All of my 3 kids devoured the first batch I made so we will definitely be making baked oats regularly for breakfast at our house. Baked oats are super easy to make and highly customizable.

I added blueberries as my topping but we also made them with chocolate chips, peanut butter and raspberries and they all worked very well. Get your blender out and give these a try right away! You will be amazed at how good these taste!

This recipe makes four  8-ounce ramekins but if you have guests or a bigger family (or just want to make a bigger batch), just double the recipe.

Ingredient notes

  • Oats: you can use old fashioned rolled oats or quick/instant oats. You can also use store bought oat flour or make your own oat flour by processing rolled oats in a food processor and use that instead.
  • Banana: it should be ripe, like for banana bread. Brown skin is ok.
  • Baking powder: it will help the baked oats rise and gain the wonderful cake-like texture.
  • Eggs: it’s what makes TikTok baked oats like cake, rather than baked oatmeal. Eggs also add some protein to this breakfast.
  • Maple syrup: to add some sweetness to the baked oats.
  • Almond milk: I use unsweetened almond milk but you can also use unsweetened vanilla, regular dairy, coconut or oat milk 
  • Vanilla, Cinnamon & Salt: to add some depth to the flavor.

How to make Blended Banana Baked Oats

Step 1: Grease the ramekins and heat the oven to 350 degrees Fahrenheit. I use oil spray for this. This recipe will make four 8-oz ramekins. If you don’t have ramekins, you can also use a greased muffin tin and turn baked oats into muffins.

Step 2: Blend all the ingredients except for blueberries in a standup blender until smooth.

Step 3: Stir in your add ins. The recipe calls from fresh blueberries but you can also use raspberries, chopped strawberries or chocolate chips. So many options!

Step 4: Pour into ramekins and top with more blueberries (or your add ins of choice) and bake in the preheated oven directly on the rack for about 25 minutes or until a toothpick inserted in the center comes out clean. Don’t overbake!

Serving, storage and reheating

Baked oats are similar to muffins although the texture is a little softer so you'll eat them with a spoon straight from the ramekin. They taste best when they are warm so I recommend eating them right away (let them cool slightly first).

If you have extras, cover them with plastic wrap and store in room temperature for 2 days or in the fridge for up to 7 days. You can also freeze them for up to 3 months. If stored in the fridge, take them out, remove the wrap and reheat in the microwave for 20-30 seconds. If frozen, bring to room temperature first. You can leave them out on the counter overnight and enjoy in the morning!

I like serving these banana baked oats with a drizzle of almond or peanut butter on top but that's completely optional.

Substitutions and variations

As I mentioned, baked oats are highly customizable, just like oatmeal. By adding different ingredients, you can easily change the flavor profile and go with what your family likes.

  • For a Banana Chocolate Chip baked oats, swap blueberries for chocolate chips.
  • For a Double Chocolate version, add 1 tablespoon of unsweetened cocoa powder to the mix and stir in chocolate chips at the end.
  • To make Banana Peanut Butter oats, follow the instructions and instead of blueberries, add 1 tablespoon of peanut butter directly to the batter and give it a stir, or divide in small portions and drop directly to the batter in ramekins for a “lava” effect.
  • Instead of blueberries, you can also use fresh raspberries, chopped up apples, strawberries or peaches.
  • If you don’t have access to a blender, you can also use oat flour and skip the blending part. Just mash the bananas in a bowl, add eggs, vanilla and maple syrup and stir together until smooth. Then add the oat flour, cinnamon, baking powder and salt, give it a stir and bake.

Ingredients

  • 1 banana
  • 1 cup rolled oats
  • 2 large eggs
  • 2 tablespoon maple syrup
  • ½ cup unsweetened almond milk
  • 1 teaspoon vanilla
  • a pinch of salt
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • ½ cup fresh blueberries

Instructions

  • Heat the oven to 350 degrees Fahrenheit. Lightly spray 4 ramekins with oil.
  • In a standup blender blend together all the ingredients until smooth.
  • Stir in half of the blueberries.
  • Pour the batter into 4 ramekins and top with the rest of the blueberries.
  • Bake directly on the rack for 25 minutes or until a toothpick inserted in the middle comes out clean.
  • Take the ramekins out, let cool slightly and enjoy warm!

Notes

You can swap blueberries with other berries such as raspberries or chopped strawberries.

      This is just a cake right? The fact that it's made with oat flour rather than wheat flour only makes it gluten free no? It looks delicious, but surely it isn't a good idea to eat cakes for breakfast on the regular no matter what kind of flour you use. In terms of carb and specifically super content, it's right up there with a regular cupcake or muffin... Nice photos btw 🙂

        Hi Craig. It is LIKE cake or a muffin, you're right! The beauty of this dish is that it is made with clean and healthy ingredients (oats, eggs, banana, blueberries) so it's like guilt-less breakfast cake. Looking at the ingredients, it's as if you had some oatmeal, sliced banana with 1/2 tbsp of maple syrup, some blueberries and a hard boiled egg on your breakfast plate, only blended and baked :-).

        Are you also opposed to pancakes or waffles for breakfast? These have way less syrup than I use on a pancake or waffle. Do you not sweeten your oatmeal or out milk or cream on it? Many people do and likely more sweetener than is in each of these "cakes". Oatmeal, lightly sweetened and with a bit of almond milk, eggs and fruit seem like a great breakfast to me, no matter how you end up cooking it.
