High Protein Strawberry Yogurt Chia Pudding
This Strawberry Chia Seed Pudding is the perfect breakfast, snack, or even dessert option. Not only is it delicious and fun to eat, but it’s also super nutritious! Like my Oat Milk Chia Pudding and Blue Chia Pudding recipes, it’s high in fiber, omega-3s, and protein, and the addition of Greek yogurt makes it super creamy - reminiscent of strawberries and cream!
And it’s the perfect recipe for strawberry season, but you can also make it with frozen strawberries to enjoy this tasty treat anytime of the year. Or instead of strawberries, any berries or berry combination will work: blueberries, blackberries, raspberries. There are so many flavor combinations!
This simple Greek yogurt Strawberry Chia Pudding is so easy to make, the hardest part is waiting for it to be ready! Eat it for a quick breakfast or make it a fancy parfait for a beautiful dinner party dessert.
Ingredients
- Chia seeds - black or white chia can be used
- Frozen strawberries - fresh will also work
- Greek yogurt or Icelandic skyr - I like to use these for their thickness and texture
- Unsweetened almond milk - You can also use soy milk or milk of choice
- Maple syrup - increase the recipe amount for sweeter pudding
- Vanilla extract - always use quality flavoring extract for most flavorful results

Instructions
Here's how you make strawberry chia pudding.
- Step 1: Place frozen (or fresh) strawberries in a small saucepan or skillet.
- Step 2: Cook covered until there is a lot of juice and the strawberries are soft (5-10 minutes).
- Step 3: Use an immersion blender to puree until smooth. Set aside to cool.
- Step 4: Make the chia pudding. In a medium bowl combine ⅓ cup of the cooled strawberry puree, chia seeds, almond milk (or milk of choice), Greek yogurt, vanilla, maple syrup.
- Step 5: Mix the chia combination vigorously with a spoon or a whisk to blend well. Set aside for 10 minutes, then stir again, taking care to break down any lumps in the mixture.
- Step 6: Place the chia pudding in a mason jar or an airtight container and refrigerate for at least 2 hours, or overnight.
- Pour remaining strawberry puree in an airtight container and refrigerate until ready to assemble the chia pudding.
Chia pudding parfait
- When ready to serve the pudding, get 2 small glasses or glass jars, open the container of pudding and stir again.
- Place a layer of chia pudding in each glass, add a layer of strawberry puree, then top with the remaining chia pudding.
- If you want, decorate the top of each pudding parfait with additional yogurt and garnish with fresh strawberries.
How to Serve
These little treats are great on their own for breakfast or snack and they even make a delightful dessert parfait.
I love it as a layered parfait with strawberry puree and yogurt. You can add more layers such as vanilla yogurt, granola and/or fresh berries.
You can also turn this recipe into a Strawberry Chia Bowl and top it with fresh fruit, nut butter, nuts and seeds or granola.
Storage tips
Store the chia pudding and the strawberry puree separately in airtight containers in the fridge. Leftovers will be good for up to 4 days.
Strawberry puree can be frozen in a freezer safe bag for up to 6 months. I do not recommend freezing the chia pudding.
Recipe Tips & Tricks
- Use white or black chia seeds. White chia seeds display the pink color better, but there is no flavor or nutritional difference between the two. You can get chia seeds on Amazon.
- Use fresh or frozen strawberries. Cook strawberries until soft before pureeing. Fresh strawberries will take less time to cook down than frozen ones.
- Try a combination of other berries as well for a variety of flavors.
- Any milk will work, plant based or dairy.
- Use non-dairy milk and Greek yogurt to make a vegan version of this recipe.
- You can use honey or agave nectar as a sweetener in place of the maple syrup, but it will alter the taste slightly.
Top Tip
Make sure to stir or whisk the pudding really well before chilling in the fridge. You don't want clumps of dry chia seeds in your pudding!

Likely, they need more time. 2 hours is minimum but waiting overnight is best for proper liquid absorption. Another important factor is stirring well - after adding liquid and yogurt and stirring immediately, leave the pudding on the counter for 10-15 minutes, then stir again. This method will help you avoid clumping and you will get creamy, uniform pudding.
You can but regular yogurt is thinner and has less protein so the nutritional value will change.
No. Freezing will change the chia pudding texture. It’s super easy to whip up a new batch though!
