I’m usually a Cucumber Spinach Smoothie kind of girl in the summer, but lately I’ve been on a major pistachio kick—and this creamy, dreamy Pistachio Smoothie has officially stolen the spotlight. It’s packed with plant-based protein, healthy fats, and fiber, and keeps me full for hours without any added sugar. As someone who’s all about healthy recipes that actually taste good, trust me when I say: this one’s a keeper.
Rich, thick, and naturally sweet from frozen banana, this smoothie tastes almost like a milkshake—but it’s made with nutrient-dense ingredients like hemp hearts, baby spinach, and soy milk (aka my secret weapon for an extra protein boost). It’s perfect for breakfast, post-workout fuel, or an afternoon snack when you want something delicious and energizing.

Ingredients
- Shelled pistachios - raw or roasted.
- Banana - frozen. You can also use frozen avocado for extra healthy fats.
- Hemp Hearts - You can use chia seed if you don’t have hemp seed, or simply omit.
- Baby spinach - You can sub baby kale for the fresh spinach.
- Unsweetened soy milk - or milk or liquid of choice. See Tips & Tricks section.

Instructions
- Step 1: (optional) - For a smoother texture, soak the shelled pistachios in hot water for 10–15 minutes.
- Step 2: Drain the nuts.
- Step 3: Combine all the ingredients in your blender (pistachios, spinach, soy milk and frozen banana).
- Step 4: Blend on high until the smoothie is completely smooth and creamy and there are no chunks.
- Step 5: Pour into a tall glass, garnish with chopped pistachios and serve immediately!
How to Store Leftover Smoothie
If you have leftover smoothie, transfer it to an appropriately-sized airtight container or jar with a sealing lid, like a mason jar. Store in the fridge for up to 2 days. Shake before serving as it may split.
“Appropriately sized” means the container isn’t so large that it leaves a lot of space for air to mix in the jar. You want a jar that leaves as little extra room for air as possible.
More Tips & Tricks
- You can use raw or roasted and salted pistachios in this recipe.
- If you don't have a high powered blender (like a Vitamix blender) soak the pistachios first to soften them a bit.
- If you don't have frozen bananas, add a handful of ice to the blender with the rest of the ingredients.
- I used soy milk for creaminess and high protein content, but you can swap it for milk of choice (unsweetened almond milk, oat, dairy) or even use coconut milk or coconut water.
- If you don't have hemp hearts, you can use chia seeds or omit from the recipe.
