Pistachio Smoothie

Nutrient-dense, creamy and delicious Pistachio Smoothie is a perfect breakfast or snack for pistachio lovers.

Ingredients

  • 2 tablespoon shelled pistachios
  • 1 large banana frozen
  • 1 tablespoon hemp hearts
  • 1 cup baby spinach
  • cup unsweetened soy milk or liquid of choice

Instructions

  • Soak the pistachios (optional):For a smoother texture, soak the shelled pistachios in hot water for 10–15 minutes, then drain. This step is optional but recommended if you don’t have a high-speed blender.
  • In a blender, combine the soaked (or raw) pistachios, frozen banana, hemp hearts, baby spinach, and soy milk.
  • Blend on high for 30–60 seconds, or until the smoothie is completely smooth and creamy. If it’s too thick, add a splash more milk to reach your desired consistency.
  • Pour into a glass and enjoy immediately. Optionally, top with a sprinkle of chopped pistachios or hemp hearts for texture.

Notes

Both raw or roasted and salted pistachios will work in this recipe.
I used soy milk for high protein content and to add creaminess but you can swap it for milk of choice (almond, oat, dairy) or coconut water. 
If you don't have hemp hearts, swap them for chia seeds or omit from the recipe.
