Air Fryer Red Potatoes

  • 1 ½ lb red potatoes small, halved or medium to large quartered
  • 1 ½ tablespoon olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions

  • Clean the potatoes thoroughly, if needed.
  • If using small potatoes, cut them in half. For medium or large potatoes, cut them into quarters or a large dice.
  • Place cut potatoes in a medium or large mixing bow, add olive oil, salt, paprika, garlic powder and onion powder.
  • Mix thoroughly to coat each potato piece in oil and spices.
  • Place the potatoes in the basket of an air fryer in one single layer.
  • Air fry at 370 degrees Fahrenheit for 20-25 minutes, shaking the basket after 10 minutes. Check for doneness with a fork after 20 minutes. If you prefer crispier potatoes, air fry fo additional 5 minutes.
  • Garnish with fresh chives or scallions, if desired, and serve immediately.

Notes

You can swap olive oil with avocado or canola oil. 
A larger air fryer will work best for this recipe. I used my 7-qt Go Wise Air Fryer. If yours is smaller, I recommend air frying the potatoes in two instalments. Keep the already cooked potatoes under tin foil or in a warm oven until you add the second part. 
If you prefer less seasoned potatoes, stick to olive oil, salt and garlic powder. 
You don't need to preheat your air fryer for this recipe.
