- 4 slices multigrain bread or bread of choice
- 4 slices thin sliced bacon or more, if desired
- 1 tomato large
- 1 avocado ripe
- 4 lettuce leaves
- 2 tablespoon mayonnaise or butter
- salt and pepper to taste
Preheat the oven to 400 degrees F. Place bacon slices on a baking tray and cook for 10-20 minutes, until firm and crispy. Or, if you prefer, cook the bacon slices in a skillet on medium heat, 4-5 minutes per side.
Place bacon slices on paper towels to absorb excess grease.
Spread the mayo (or butter) on 4 slices of bread.
Assemble the sandwiches: place lettuce leaves, cooked bacon, tomato slices and avocado on 2 pieces of bread.
Season with salt and pepper, if desired.
Cover with the remaining 2pieces of bread and press lightly to help the ingredients stick.
Cut each sandwich in half (if you want) and enjoy.
Depending on your preferences, adjust bacon cooking time. I cooked mine in the oven for 15 minutes. If you like it extra crispy and brittle, extend cooking time by 5 minutes, checking often to prevent burnt, bitter bacon.
If you like your bread toasted, you can toast it before assembling the sandwiches.
For a healthier version use whole grain bread and turkey bacon, mash the avocado and use it instead of mayo.
